Marshmallow Snowballs

Ingredients
  • 1 bag Mini Marshmallows
  • 1 can Crushed Pineapple (drained)
  • 1 cup Whipping Cream
  • 1 Tbs Sugar
  • ½ cup shredded Coconut (optional)
  • 4 oz pecans (chopped - optional)
  • Graham Crackers crumbs (2 sleeves) or Box of Vanilla Wafers Crushed
Instructions
  1. Place marshmallows in a large bowl, add the drained crushed pineapple and stir. Cover the bowl and refrigerate for an hour.
  2. Remove the marshmallows from the refrigerator and stir in the coconut and nuts if using.
  3. Whip the Whipping Cream with an electric mixer and add the sugar while mixing. Fold the whipped cream into the marshmallow mixture.
  4. Roll the mixture into balls (I use a ice cream scoop to keep them uniform in size) then roll the balls in the crumbs.
  5. Place the Snowballs in an airtight container and keep refrigerated until serving.
