Marshmallow Snowballs

- 1 bag Mini Marshmallows
- 1 can Crushed Pineapple (drained)
- 1 cup Whipping Cream
- 1 Tbs Sugar
- ½ cup shredded Coconut (optional)
- 4 oz pecans (chopped - optional)
- Graham Crackers crumbs (2 sleeves) or Box of Vanilla Wafers Crushed
- Place marshmallows in a large bowl, add the drained crushed pineapple and stir. Cover the bowl and refrigerate for an hour.
- Remove the marshmallows from the refrigerator and stir in the coconut and nuts if using.
- Whip the Whipping Cream with an electric mixer and add the sugar while mixing. Fold the whipped cream into the marshmallow mixture.
- Roll the mixture into balls (I use a ice cream scoop to keep them uniform in size) then roll the balls in the crumbs.
- Place the Snowballs in an airtight container and keep refrigerated until serving.
